BBQ marinade for pork and chicken
American BBQ is an oil-based marinade that gives meat the typical flavor of American grilling. It's made for pork and chicken, for grill and BBQ menus.
Where it's used
In a restaurant or grill, marinate the pieces you'll cook during the day. In a butcher shop, use it to prepare ribs, chops or chicken thighs that customers buy marinated and cook themselves.
Dose: 75 g per kg of meat
Weigh the meat and work it out: for 4 kg you need 300 g of marinade, for 12 kg 900 g. Keep the marinated meat in the fridge until it goes on the grill or the counter.
