Refractometer
Dairy refractometer: measures dissolved solids (sugars, proteins, dry matter) in milk, yogurt and whey.
Key Features
- Function: Measures the concentration of dissolved substances
- Applications: Quality control for milk, yogurt, whey, and liquid products
Details
What it measures
A refractometer measures the concentration of dissolved substances in a liquid. In dairy products, that means sugars, proteins and dry matter. You use it for milk, yogurt, whey and other liquids as a quality check during production.
Where it helps
- With whey, to track the process when you process it.
- With fruit yogurt, to check the sugar ratio.
- With milk, to see how dry matter changes from day to day.
What to keep in mind
Many refractometers read on the Brix scale, which was built for sugar. So for milk and whey, a Brix reading is an approximation of dry matter, not its exact value. To use it as a reliable check, compare it from time to time with a lab analysis, oven drying or a milk analyzer, and then track the changes. Together with the the lactodensimeter, it gives you a fuller picture of the milk you receive. You'll find other equipment in dairy equipment.
