Glutamate
MSG, a flavor enhancer for meat products such as salami and cooked products: boosts flavor intensity and makes the taste more pronounced.
Key Features
- Function: Flavor enhancer
- Applications: Meat products
Details
What it is
MSG is a flavor enhancer. Unlike meat flavoring, which adds a meat taste, MSG brings out the flavor the mix already has from the meat and spices, so the product tastes richer. In meat, monosodium glutamate (E 621) is the most used, one of the glutamates numbered E 620 to E 625.
Where it's used
In meat, MSG mainly suits processed products such as salami, sujuk and cooked products. It's used by cured-meat makers and butcher shops that want a stronger, more consistent flavor in these products.
What to keep in mind
- Flavor enhancers aren't allowed equally in every food category. Before adding it to a new recipe, check that it's allowed for that product under current legislation.
- In the ingredients list, the category is written with the name or E number, e.g. “flavor enhancer: E 621”. You'll find the E number in the product specification.
- For the amount, follow the manufacturer's instructions.
For a concentrated meat flavor we also have meat flavoring in powder and liquid. You'll find other additives and how they're labeled in meat additives.
