Details
What it does
Klerenzime is a food additive used in meat processing. It has three functions: preservation, color stabilization and microbiological safety. It's for cured-meat makers and butcher shops that want the product to keep its color and keep better.
Before you use it
- Follow the dose the manufacturer gives on the pack or in the technical data sheet. Don't set the amount by eye and don't copy it from another additive.
- Check whether it's allowed for the category of product you make. In the EU, additive rules differ for fresh meat, meat preparations such as qofte mix, and meat products such as salami and ham. Work in line with current legislation.
- On your product label, the additive is listed with its functional category and its name or E number.
Other ingredients for meat
You'll find phosphates for water binding, MSG for flavor, binder for doner and qofte and salami culture, with what each does and how it's labeled, in meat additives.
